DEAR SUN SPOTS: I am an 83-year-old widower and want to collect some economical, easy recipes. I’m late to the cooking game but am enjoying it. I know there are a lot to Google but I don’t really like to spend time on the computer. I have some of my late wife’s recipes but need some new ones. I know you publish recipes sometimes and I like having them. I hope you and your readers will send me a few to try. — Harold, Minot
ANSWER: Our readers will be all over this one! To start off, here’s the recipe for corn chowder that I made this past weekend.
In a soup pot over high heat, bring 2 large (1 1/2 pounds-peeled, or skin on) cubed potatoes, 1/2 cup diced onion, and 1 cup chicken or vegetable stock to a boil. Reduce heat to medium-low and simmer, covered, until potatoes are tender, about 15 minutes.
Add 1 cup fresh or frozen corn. (You can carefully puree half of this mixture in a blender then return the mixture to the pot, or skip that part and move on to the next step.) Stir in a 15-ounce can creamed corn, 1 cup milk, and 3/4 teaspoon salt, and pepper to taste. Simmer for about 10 minutes until flavors are blended. This makes 4 servings. You can freeze it, and you can also add other ingredients to it, like sauteed diced peppers, bacon, ham, or chicken, and any herbs you like.
Remember, you can follow recipes exactly or just use them for suggestions and make each meal your own. Cooking can be a very enjoyable activity and a good homemade soup is always great to have on hand and to share with others.
DEAR SUN SPOTS: I was at a gathering recently and drank some delicious Blood Orange Tea. I liked it so much I saved the tea bag tag but I can’t seem to find it locally and the party host said he received it as a gift from someone. The brand name is Traditional Medicinals. I’d rather pick it up locally — I don’t do online shopping unless absolutely necessary. — LynAnn, no town
ANSWER: Because you don’t specify what town you live in, I’m not sure what’s close to you, but Axis Natural Foods in the Center Street Plaza in Auburn and Morning Glory at 60 Maine St. in Brunswick are good bets for having that tea on the shelf.
