Happy New Year! I’m going to be optimistic as we go into another year of COVID and its variants. I will continue doing what I have been to try and stay healthy.
Last Sunday, Susan and I traveled to Madison, New Hampshire, where we had a great visit with Mike and Penny, and their family. Penny came through once again with a delicious meal of turkey pie, stuffing, onions, and carrots. There was a multitude of desserts, which I was able to avoid. Madison LaForce, my great-niece, is a senior this year at St. Thomas Aquinas, and so graduation photos were received beautiful shots.
I stayed in for much of the week, with icy conditions in my driveway! I did get out one day with Susan and we had lunch at Yianni’s. Thursday and Friday were spent prepping for our family Christmas on Saturday. I made biscuits for the traditional stuffing. I also decided I would make cinnamon rolls. I have a fabulous recipe I discovered several years ago. They are very light and moist, which I attribute to the mashed potato that is in the recipe. Because I have vegans in the family, I decided I would make rolls that were vegan. Everyone was very happy with the results, and all went home with a good amount.
I cooked a turkey on Friday and made everything as simple as possible for Saturday. Everyone showed up around 11:30. We had our stockings, then a great meal followed by presents, then dessert. It was a wonderful day, and all were happy with the gifts they received. I suggested that we not do it again on New Year’s Day, because there were some very tired teens who had been up late the night before. Josh escaped to an upstairs bedroom at some point and went to sleep there! My awesome daughters cleaned up and my house now looks better than it did before!
I’m still doing just fine without DISH. I watch Netflix when there’s nothing on TV that I’m interested in. I recently watched Don’t Look Up, which I recommend. I’ve now started The Unforgivable. I can always find something of interest.
