WEST PARIS — Romero’s Mexican Food Truck has opened for business at 27 Bethel Road in West Paris, alongside Cooper Farms Stand.
It has been a soft opening: there is no phone service yet and for the time being sales are cash only. But those formalities will soon be resolved and they are not stopping hungry customers. Anticipation has been high and judging by responses to posts on the West Paris Community Facebook page, the neighborhood is all in on Romero’s.
“Good this area needs some good food – there is nothing between So. Paris & Bethel,” wrote one resident in response to a post in early May before Romero’s opened. “Long overdue – looking forward to some good stuff!!”
After their first stop at the food truck another posted: “We ate there Friday evening…and will go again & again. Great food, friendly service & not hard on the wallet.”
“I hope they succeed beyond their wildest dreams!” said another. “We had dinner there Friday & will plan at least a meal a week!”
Romero’s is run by husband-and-wife team Gulmaro and Yvette, who is a registered nurse. According to Yvette, feeding the community has been her husband’s dream and she is happy to take the ride with him.
The menu features the staples one would expect: quesadillas, fajitas and burritos and all meals are priced under $15. A specialty that has quickly become popular is the quesabirria and consumé, a dish that comes with three handmade grilled tortillas, shredded beef, cheese and onion, and served with a side of biarria broth and handmade, grilled corn tortillas. It comes with cilantro and onion.
Romero’s hours are Tuesday to Sunday from 11 a.m. – 7 p.m.
