DEAR SUN SPOTS: In the summer time, I’ve seen horses wearing some kind of cover over their eyes. What are these things? — Stumped in Hartford.
ANSWER: These are fly masks, which protect the horse’s eyes and ears from gnats, flies, ticks and other parasites that may enter the ear or cause infection to the eye. The masks are made of mesh material, therefore they are see-through to the horse. The masks are meant to protect the eyes, and some are expanded to protect the ears and muzzle, too.
DEAR SUN SPOTS: I wrote and asked for a recipe for thick French crepes. I meant from Canada. The French in Canada are the only ones who can make the real crepes like mama and my memere used to make when I was young. I used to put syrup and butter or butter and brown sugar on them and roll them up. They were made in a frying pan, not a pancake or blintz. They were made with eggs, flour, and baking powder, but I am not sure if this was mixed with milk or water. Also, I don’t know how much of each ingredient to use. Salt and pepper
DIRECTIONS
Beat eggs, milk, salt and pepper in microwave-safe bowl or 12-oz. coffee mug until blended.
Microwave on high for 45 seconds: stir. Microwave until eggs are almost set, 30 to 45 seconds longer. Serve immediately.
Top with a sprinkle of shredded cheese or fresh herbs.
For rich creamy scrambled eggs, add small cubes of cream cheese or a dollop of cottage cheese before cooking.
For added flavor, stir a bit of creamy salad dressing, pesto, salsa or your favorite herb into the egg mixture.
Don’t over cook. Scrambled eggs will continue to cook and firm up after removed from microwave.
Microwave ovens vary. Cook time may need to be adjusted.
